This is one of my all-time favorite smoothies. The peaches are so light and cooling, and the extra snap of the fresh ginger is just delicious. I like to use either the frozen cubed ginger if I’m in a hurry or grate my own. A good trick for extending the life of any remaining ginger root is to just put it in the freezer. when you are ready to use it just pull it out of the freezer and grate it up. Another smoothie tip is to pre freeze all the fruit and leafy vegetables prior to using them in your smoothies. Prior to freezing bananas I peel and break them into three or four chunks so they are easier for the blender to pulverize .

PEACHY GINGER SMOOTHIE
Ingredients
3 cups of frozen sliced peaches
2 cups frozen spinach
1 frozen ripe banana (peel and break into smaller pieces before you freeze)
4 tsp freshly grated ginger
2 cups of plant or nut milk (add more for a thinner consistency)
1 tbs chia seeds
1/2 Tsp vanilla

Directions
If you have a Vita-Mix® or a NutriBullet® those are ideal for making smoothies, but you can use any blender you like. Mix all ingredients together and blend on high for about 30 seconds or until everything is chopped up and a nice consistency. Using one to two cups of oat milk or any other plant or nut milk. (Use more/less of that liquid based upon the consistency desired). Best to add your liquid last and do a taste test during the processing.
Remember smoothies are very forgiving. So add more or less of anything you like. I love to up the fresh ginger in this recipe.
