I love this easy yet nutritious recipe, it has lots of protein and it is gluten free and vegan. I have mine warm with vegan butter and strawberry jam.
Ingredients
¼ cup Chia Seeds
1 cup water
2 ½ cups Buckwheat Flour (or sub–Oat Flour)
3 tsp baking powder
1 ½ tsp Salt
2/3 cup water
¼ cup coconut oil -melted (or any neutral liquid oil)
¼ cup Walnuts or seed of your choice

Instructions
Whisk together chia seeds and 1 cup of water. Let sit for 20 minutes until it turns to a jelly consistency.
Preheat the oven to 355º F (180º C). lightly grease a small 8X3 inch loaf pan and line with parchment paper leaving an overhang on both sides.
In a mixing bowl, whisk together the buckwheat flour, baking powder, and salt. Then add the remaining 2/3 cup of water, coconut oil, and chia seed gel mixture. Mix until just combined, do not over mix.
Spoon the dough into your prepared loaf pan. Sprinkle with nuts or seeds as desired. I used walnuts on mine. Bake for about an hour and ten minutes, checking with a toothpick that comes out clean.
Remove from the oven and allow to cool completely. Then lift from the pan with the parchment paper overhang.

Slice and enjoy!
