This is one of my favorite healthy and hearty breakfast recipes adapted from the book The Plan. It is full of protein, omega 3’s, calcium and fiber.

FLAX GRANOLA
1 cup water
2 cups whole flaxseed
1 tablespoon agave nectar
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
½ teaspoon ground nutmeg
1 teaspoon pure vanilla extract
½ cup raisins or any dried fruit

INSTRUCTIONS
First in a medium bowl add the water to the flaxseed and mix well. Let sit for 30 minutes then mix again.
Preheat the oven to 275 degrees.
Add all the remaining ingredients to the flaxseed except raisins and mix thoroughly.
Spread the granola in a thin even layer on a baking sheet and bake for 50 minutes.

Reduce the oven temperature to 225 degrees. Cut the sheets of granola into clusters, then turn over and bake an additional 30-40 minutes until the granola is thoroughly dry.

Add raisins or dry fruit of choice and store in an airtight container. I love mason jars for storage.
Use within two weeks.


Notes
There are many other options for add ins, I added ½ cup of raw sunflower seeds to my last batch. Candied ginger is also a delicious addition.
I serve with alternative milk and add fresh fruit, blueberries are my favorite.
